Garlic and Tomato Butter

The ideal accompaniment for fresh baguettes, a grilled steak or char-grilled vegetables

Prep. Time: 10 minutes

Cooking time: none

Serves: 4

Butter, softened                   150 g

Tomato puree                       2-3Tbsp

Lemon (organic)                    1

Garlic cloves                      2

Salt and freshly ground black pepper


1. Grate the lemon to produce 1-2 tsp of zest, and then squeeze out the juice.

2. Place the butter in a mixing bowl over a saucepan of hot water to make the mixing easier. Combine the butter with the lemon zest and lemon juice to taste. Add the tomato puree and season to taste with salt and freshly ground black pepper.

3. Mix the pressed garlic into the butter.

4. Place in a serving dish or small dishes and chill before serving.
